Ingredients

  • Olive oil
  • 2 cups marinara sauce
  • 1/3 cup mascarpone cheese
  • 1/4 cup chopped fresh Italian parsley leaves
  • 2 teaspoons chopped fresh thyme leaves
  • 1 pound purchased cheese tortellini
  • 2 ounces thinly sliced smoked mozzarella
  • 1/4 cup freshly grated Parmesan

Directions

Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.

Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.

    Quick, Easy, and Delicious

    I made this tonight. Prep time was so fast. Tortellini cooks up quickly, mixing the sauce while waiting, transfer and bake. I... couldn't find the smoked mozzarella, so I used an Italian blend of shredded cheese instead. Turned out just fine. I also finely chopped some garlic and shallots and added some mushrooms. Next time I might add some spinach and perhaps the Italian sausage that some have suggested. Can't wait to make this dish for the next big family event. Read more

    The ingredients are a bit pricey, almost 20 dollars in cheese alone. I have a greaaaaaaaat marinara, which I never go wrong... with. I usually know the dish is a hit when the left overs are gone, this one took a while. In my opinion the smoked mozarella was a bit overpowering.     I made this dish for sunday dinner for my Italian family. I was a little nervous because my Italian grandmother is usually... the main cook and she uses friendly criticism when it comes to cooking, because her way is the right way and thats that. lol I used our own homemade tomato sauce, I didn't add the herbs because, our sauce has enough flavor. This was delicious my whole family loved it! Even my grandmother. I also shredded the smoked mozzarella, instead of simply cutting it in slices and laying it on top.     Great dish and super easy to make. I noticed the post below that the recipe was posted wrong and should actually have smoked... gouda instead of the smoked mozzarella. Definitely much better with the smoke gouda. Read more
