Ingredients

  • Olive oil
  • 2 cups marinara sauce
  • 1/3 cup mascarpone cheese
  • 1/4 cup chopped fresh Italian parsley leaves
  • 2 teaspoons chopped fresh thyme leaves
  • 1 pound purchased cheese tortellini
  • 2 ounces thinly sliced smoked mozzarella
  • 1/4 cup freshly grated Parmesan

Directions

Preheat the oven to 350 degrees F. Lightly oil an 8 by 8 by 2-inch baking dish.

Whisk the sauce, mascarpone cheese, parsley and thyme in a large bowl to blend. Cook the tortellini in a large pot of boiling salted water until just tender, about 2 minutes. Drain. Add the tortellini to the sauce and toss to coat. Transfer the tortellini mixture to the prepared baking dish. Top the mixture with the smoked mozzarella and Parmesan. Cover and bake until the sauce bubbles and the cheeses on top melt, about 30 minutes.

    I made this dish for a housewarming dinner for my best friends and the pan was cleared as soon as it was out of the oven!... Everyone loved it and I will definately be making this dish again. The cheese and pasta makes it very filling so I would also suggest this as a side dish or served with some chicken. The original recipe is wonderful but also has plenty of room for alterations if one so desires. I highly reccomend this- best pasta dish I have ever eaten/made. Thank you Giada!!!!Read more

    I made this dish for my friend and I, and we liked it, but when we had the left overs the next day we both agreed it was even... better reheated! He was going to havee THIRDS, but was saving room for the fresh brownies I had baked. I think reheating it softend up the toretellini more. I believe I didn't boil them long enough in the first place, but now I know! I am for sure going to use this one again!Read more
