Ingredients

  • 24 (1/2-inch-thick) slices baguette bread
  • 3 tablespoons olive oil
  • 4 ounces soft fresh goat cheese
  • 1/4 cup whole milk ricotta cheese
  • 1 tablespoon finely chopped fresh basil leaves
  • 2 teaspoons finely grated lemon peel
  • Salt and pepper

Directions

Heat a grill pan over medium-high heat. Brush 2 tablespoons of olive oil over the bread slices. Grill the bread until golden brown, about 2 minutes per side.

 

Stir the goat cheese, ricotta cheese, basil, lemon peel, and remaining 1 tablespoon of oil in a small bowl until smooth and creamy. Season, to taste, with salt and pepper. Spread the cheese mixture over the crostini. Arrange the toasts on a platter and serve.

    I made this once for a friend and it was so delicious, we make it nearly every time we get together now. The dip is so light... and refreshing. It is too easy to eat the whole baguette! I do not think it is bland at all like some of the other reviewers mentioned. I have a lemon and basil herb mix that I use instead of fresh basil because I hardly ever use fresh herbs before they go bad, and it adds a nice extra touch.. but even without it I thought it was great!     I've made this both with the regular and the reduced fat goat cheese sold at Trader Joe's. It's delicious either way. The... lemon zest really livens up the flavor. Also, it's super quick--zest, chop, blend by hand, and you're done.Read more
