Ingredients

  • 2 grapefruits, trimmed of skin and cut into large slices
  • 1/2 red onion, peeled and thinly sliced
  • 1/3 cup pitted chopped black olives
  • 1 bunch basil, leaves thinly sliced (about 1 cup)
  • 2 tablespoons chopped chives
  • 3 tablespoons aged balsamic vinegar
  • 3 tablespoons extra-virgin olive oil
  • Salt and freshly ground black pepper

Directions

Place the grapefruit slices in a slightly overlapping pattern on a serving platter. Sprinkle the onion slices over the grapefruit. Then sprinkle the olives. Top with the basil and chives. Drizzle the balsamic vinegar and olive oil over the salad. Sprinkle with salt and pepper and serve.

    Magnifico!! Red Onion & Grapefuit Salad!

    As soon as I saw the salad, I knew it was a winner. I couldn't readily find fresh ruby grapefuit, but found Del Monte in the... jar in the produce isection, drained the juice & viola! It worked wonderfully! I added chopped walnuts & raisins for healthy sweetness. If I had feta cheese on hand, I would have sprinkled it on as well! Great recipe.     Isn't this like that African salad from back in the 70's ?

    A long time ago, an orange, red onion, and black olive salad was published in Pleasures of Cooking (the now long-defunct... Cuisinart magazine). I'm sure it was back in the 70s or 80s. Barbara Kafka was the author and the recipe also appears in her book called Vegetable Love. She associates the recipe to the regions of Morocco and Algeria. Kafka's recipe had a cumin vinaigrette.     Grapefruit is as healthy as tomatoes, has a longer shelf life and is one of the healthiest foods you can eat. We are working... on products with longer shelf lifes and this fruit is one of the best. Unfortunately some stores are holding it way longer than they would ever hold tomatoes...     ..until the first bite. All the flavours work together to create a tastey, eye appealing salad. One thing I would recommend... - make sure you have a fresh, ruby red or pink grapefruit - make sure it hasn't been sitting around the grocery store forever. That is the only complaint about the salad I made...the grapefruit that was available was just a plain yellow flesh and it was oooold lol. Try it...you won't be disappointed :-)Read more
