Ingredients

  • 2 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • Salt and freshly ground black pepper
  • 6 (3 1/2 by 1/2-inch-thick) slices rustic white bread, halved
  • 1 large garlic clove
  • 1 tablespoon chopped fresh Italian parsley leaves

Directions

Whisk the olive oil and lemon juice in a small bowl to blend. Season with salt. Heat a grill pan over medium-high heat. Grill the bread until golden brown, about 2 minutes per side. Rub the cut sides of the toasts with the garlic. Generously brush the lemon mixture over the bread. Sprinkle with the parsley. Season with salt and pepper, to taste.

    This is the simplest thing in the world to make. The taste is just one of those things that are wonderful in their purity, like a fresh chunk of bread with just butter on it. It isn't layered and complex, but it wouldn't be better if it were. The combination of lemon and garlic is just a light and sunny taste that can brighten up any meal.

    I thought this recipe was simple and very tasty. Very bright and would be great alongside salad or soup. Way to go, Giada!

    This goes well with salads and adds just enough carbs to round out and turn into a full meal. Very easy too!
