Ingredients
Salad:
- 5 packed cups (5 ounces) arugula
- 1 (15-ounce) can cannellini or great Northern beans, rinsed and drained
- 1/2 small red onion, thinly sliced
- 3 tablespoons capers, rinsed and drained
Dressing:
- 3 tablespoons fresh lemon juice (about 1 large lemon)
- 1 tablespoon maple syrup
- 1 teaspoon lemon zest
- 3 tablespoons extra-virgin olive oil
- Kosher salt and freshly ground black pepper
Directions
Salad: In a large salad bowl, combine the arugula, beans, red onion, and capers.
Dressing: In a small bowl, whisk together the lemon juice, maple syrup and lemon zest. Slowly whisk in the oil until smooth and combined. Season with salt and pepper, to taste.
Pour the dressing over the salad and toss well to coat. Serve.

Dressing is so simple yet completely delicious! I was pleasantly surprise! My BF is a creamy dressing kind of guy and tried this-loved it, said I can make this anytime. I used a mix bag of spinach and arugula--so good. Fantastic recipe/salad, I will make this again and again, thanks Giada!

Well, I always hate when people change half the recipe and then review their own concoctions, but... I left out the capers and added a dab of dijon to the dressing. This was a really nice side dish - I served it with grilled pork chops. Very refreshing and tasty. The maple syrup added a nice hint of sweetness to balance the peppery arugula. I'd probably go with even a bit more dijon next time to give the dressing some more body.
