Ingredients

  • 1 cup seedless raspberry jam
  • 6 tablespoons orange liqueur (recommended: Grand Marnier)
  • 1 pound mascarpone cheese, at room temperature
  • 1 cup whipping cream
  • 1/4 cup sugar
  • 1 teaspoon pure vanilla extract
  • 28 soft ladyfingers or 2 (12-ounce) pound cakes, cut into 3 by 1 by 1 1/2-inch pieces
  • 3 (1/2 dry pint) baskets fresh raspberries (about 3 3/4 cups total)
  • Confectioners' sugar, for serving

Directions

Stir the jam and 4 tablespoons of the orange liqueur in a small bowl to blend.

Combine the mascarpone and remaining 2 tablespoons of orange liqueur in a large bowl to blend. Using an electric mixer, beat the cream, sugar, and vanilla in another large bowl until soft peaks form. Using a large rubber spatula, stir 1/4 of the whipped cream into the mascarpone mixture to lighten. Fold the remaining whipped cream into the mascarpone mixture.

Line the bottom of a13 by 9 by 2-inch glass baking dish or other decorative serving dish with half of the ladyfingers. Spread half of the jam mixture over the ladyfingers. Spread half of the mascarpone mixture over the jam mixture, then cover with half of the fresh raspberries. Repeat layering with the remaining ladyfingers, jam mixture, mascarpone mixture and raspberries. Cover and refrigerate at least 3 hours or overnight.

Dust with the confectioners' sugar and serve.

    I couldn't get lady fingers so I used 2 pound cakes instead (freshly made at the Atlanta Dekalb Farmer's Market). Make sure... you shave off the crust so you just get the soft internal cake. The results were so impressive and everyone loved it. if you're a guy and want your date to spend the night with you, make this for her and she's yours! This recipe is simply the best!!!     I have made this Tiramisu about 5 times and each time there are no leftovers! It is so good, I just love to make it. It's... very creamy but tastes light in your mouth. It's perfect for parties or summer BBQ's. If you are going to make this when raspberries are not in season I have used a bag of frozen organic raspberries for the filling and then put fresh raspberries on the top for a pretty presentation. I think sometimes the frozen berries are even better! One more tip, make this the night before your party so the cookies have time to soak up the jam and soften :) Enjoy!Read more

    This recipe was deliecious! It was easy to make and even though it was still pricy, it was easy to cut costs (use frozen... raspberries except for the top, buy a larger bottle of liquour so you can use it more than once etc). Personally, I didnt feel like the orange liqour was overpowering like some of the other posters did; to me I could barely taste it- just a hint of orange- but I used patron instead of grand marnier so maybe one is stronger. I also couldnt find soft Ladyfingers, so I had to get the hard ones... I just dipped them in milk before putting them in the dish to soften them a little and that seemed to work very well. I did find that in the pan I used i used more then the reccommended amount of Ladyfingers but I had to buy 2 packages anyway. Everyone who had it loved it and it is a recipe I will surely make again because its so simple!Read more

    I have made this twice, and loved it both times. The first time I made it exactly as the recipe stated and it was great. ... This last time I used frozen raspberries except for the top layer, which I loved and will do again. I also used cream cheese and cool whip, which I did not like but my family and company did like. Great recipe to make ahead, kept in the refrig for 2 days before I served it.Read more
