Ingredients

  • 2 tablespoons kosher salt
  • 16 ounces spaghetti pasta
  • 1 pound thick-cut bacon or pancetta, chopped
  • 3 tablespoons extra-virgin olive oil
  • 1 cup red onion, diced
  • 1 teaspoon red chili flakes
  • 3 tablespoons garlic, minced
  • 2 cups Roma tomatoes, diced
  • 1/4 cup red wine
  • 4 tablespoons basil, chiffonade
  • 1/4 cup freshly grated Parmesan
  • Salt and freshly ground black pepper

Directions

In a large stock pot, boil 3 quarts of water, when boiling add 2 tablespoons kosher salt and the pasta and cook until the pasta is al dente.

In a large saute pan over medium heat, add bacon and saute until bacon is crispy. Remove bacon to drain on a paper towel-lined plate and remove 3/4 of the bacon fat from the pan. Add extra-virgin olive oil, onions, and red chili flakes. Cook until onions are translucent, add garlic, cook for 2 minutes then add tomatoes. Saute for 5 minutes, then deglaze with wine.

Drain pasta and add to the tomato mixture pan. Add basil and bacon. Toss with Parmesan, and add salt and pepper, to taste.

    Guy Fieri hit a homerun with this one! My husband was even bragging about it at his office because it's such an original... twist on 2 favorites - bacon & pasta. I personally am a tomato fanatic so generally add more than the recipe. If you're looking for something fresh & new or a great replacement to classic spaghetti, you have to give this one a try.     Deliciously piquant pasta dish

    Just made this for the third time. Everyone loves it. I used a combination of pancetta and applewood- smoked bacon, both from... Trader Joe's. I prefer less red pepper flakes, maybe 1/2 tsp. I like to use the package of tomato "Starter Sauce ,"also from Trader Joe's. Lots of fresh basil and freshly grated parmiggiano-reggiano and good red wine (the rest of which will accompany the meal) and you have a fantastic dish . Cheers, Guy!Read more

    I've made it many times and my family still loves it. We've tried similar dishes at restaurants but hubby said this is... better. I did change the tomatoes to canned diced tomatoes. I think that gives it more sauce and it's less work as well. Never used the basil or parmesean since I didn't have them on hand the first time I made it so I've continued to leave them out. Read more

    I did not follow the ingredients/instructions exactly. I used white opinion, because that is all I had (just a liittle bit... for mild flavor). I used a small tomato and a half, same reason, a couple of garlic cloves chopped, not minced, because I am lazy. Three strips of bacon and about 1/2 pound of spaghetti. I also used left over Syrah wine, and just splashed it over the saute mixture. Anyway, it all turned out well. Tasted great with all the ingredients mixed together. If I were to make it again, I would barely cook the tomatoes, because I prefer them more firm, and I might have added a little more garlic. But... I happen to like a lot of garlic. PS. I didn't have fresh parmesean, but the stuff from the plastic container was fine too. Read more
