Ingredients
- 4 cloves garlic, plus 2 teaspoons minced
- 1/3 cup extra-virgin olive oil
- 2 medium heads radicchio
- 1 tablespoon unsalted butter
- 1/8 teaspoon red pepper flakes
- 1 cup panko bread crumbs
- 1/4 teaspoon kosher salt, plus more for seasoning
- 1 tablespoon finely chopped fresh parsley leaves
- 1/2 cup good quality balsamic vinegar
- Freshly ground black pepper
Directions
Smash 4 garlic cloves and combine with olive oil in a small bowl. Set aside and allow to sit for 30 minutes. Trim the radicchio heads, cut into wedges, set aside.
In a small saute pan, melt the butter over low heat and add the red pepper flakes, panko, minced garlic, and salt. Stir until panko gets crispy and golden brown. Remove from heat. Cool the mixture for a few minutes and stir in parsley.
In a small saucepan, over medium-high heat, gently simmer until the balsamic vinegar is reduced by half.
Preheat grill or grill pan to high. Brush radicchio with infused olive oil, season with salt and pepper. Place cut sides down on grill and cook for 1 to 2 minutes, turn to other cut side, grill for 1 minute, turn to back, and grill for 1 minute more.
Remove wedges to a serving platter. Sprinkle the bread crumbs over the radicchio wedges, drizzle with the reduced balsamic, and serve immediately.

I can't believe this doesn't have one hundred plus reviews. I stumbled upon this recipe while searching for "balsamic reduction", and wow, am I glad I did. I followed the recipe exactly and served it with grilled steak, and grilled naan, and it was one of the best meals I have ever made. Just awesome! I served it with a medium priced shiraz, and it was perfect. I will make it again and again.

I only recently discovered grilled salads and this is my new favorite. The panko crumbs and reduction make it perfect. If you don't like panko or don't have time it is just as good without it. This is a great recipe to entertain with and also a standby at our house in the hot summer months. We grill everything. You can make extra panko and there is usually left over reduction. These are very addicting and can be used for a variety of yummies later. I haven't tried the aged steak from this episode but plan to for our next special day. My husband loves when I make this salad to go with his steak. Great way to impress your fellow with a special dinner that is different!
