Ingredients

  • 8 ounces good bittersweet chocolate
  • 1/2 cup heavy cream
  • 1/2 teaspoon instant coffee granules

Directions

To make the ganache, place the chocolate, heavy cream and instant coffee granules in a heat-proof bowl over a pot of simmering water. Melt the chocolate until it's just melted and stir it until it's smooth.

For whipped ganache, allow the ganache to cool completely and then put it in the bowl of an electric mixer fitted with a whisk attachment and mix on high speed until it is a very light.

Fantastic recipe as always! I love coffee and chocolate together. I was a little concerned about the negative review until I read all of it. Ganache is NOT the same thing as regular frosting!

This is absolutely ridiculous! How many hours should we leave it on the mixer before it actually becomes frosting?? I saw it on Ina's show where she answered an email from a poor viewer looking for a basic frosting recipe. I knew better as I make ganache almost daily but tried it anyway and ended up adding some 10x sugar to get it useable

I made this recipe using semi-sweet chocolate (like Ina uses on the chocolate ganache cupcakes and it was FANTASTIC! I couldn't believe how easy it was to make. At first the chocolate clumped a bit, but once I turned the heat up a bit more (closer to boiling then it melted and mixed just like the picture shows. I am not a coffee fan, but you really don't taste it however, there was this added pop of taste...
