Ingredients

  • 2 tablespoons unsalted butter
  • 1 1/4 pounds fingerling potatoes, rinsed but not peeled
  • 1 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/2 tablespoons chopped fresh dill

Directions

Melt the butter in a Dutch oven or large heavy-bottomed pot. Add the whole potatoes, salt, and pepper, and toss well. Cover the pot tightly and cook over low heat for 20 to 30 minutes, until the potatoes are just tender when tested with a small knife. From time to time, shake the pot without removing the lid to prevent the bottom potatoes from burning. Turn off the heat and allow the potatoes to steam for another 5 minutes. Don't overcook. Toss with the dill, and serve hot.

    Never thought to do regular potatoes this way.. I usually do sweet potatoes by steaming them on the stove top. They turned... out great! I cut the heat, left the lid on and the potatoes were great on my buffet table. Thanks Ina!Read more

    These potatoes are great! I didn't have any dill, so I substituted Emeril's Essence Creole Seasoning for the dill. They... still turned out fantstic. I was skeptical of steaming potatoes like this, but this recipe produced flavorful, moist and tender potatoes. They were a hit with my husband and kids...and I couldn't stop eating them either!!!     I LOVE everything Ina does but these didn't do it for me. I thought there was way too much salt and way too much butter. The... flavor of the dill was completely lost. Not something i would make again.Read more
