Ingredients

  • 1 pound unsalted butter
  • 1 pound plus 2 cups semisweet chocolate chips, divided
  • 6 ounces unsweetened chocolate
  • 6 extra-large eggs
  • 3 tablespoons instant coffee powder
  • 2 tablespoons real vanilla extract
  • 2 1/4 cups sugar
  • 1 ¼ cups flour, divided
  • 1 tablespoon baking powder
  • 1 teaspoon kosher salt
  • 3 cups diced walnut pieces

Directions

Preheat oven to 350 degrees F. Grease and flour a 13 by 18 by 1 1/2-inch sheet pan.

Melt together the butter, chocolate chips, and unsweetened chocolate on top of a double boiler. Cool slightly. Stir together the eggs, instant coffee, vanilla and sugar. Stir in the warm chocolate mixture and cool to room temperature.

Stir together the flour, baking powder and salt. Add to cooled chocolate mixture. Toss the walnuts and chocolate chips with flour to coat. Then add to the chocolate batter. Pour into prepared pan.

Bake for about 30 minutes, or until tester just comes out clean. Halfway through the baking, rap the pan against the oven shelf to allow air to escape from between the pan and the brownie dough. Do not overbake! Cool thoroughly, refrigerate well and cut into squares.

    I have made these brownies many times a year for well over 3 years now and they are ALWAYS excellent! They are my go to... dessert when I need something that I know delivers. They are a touch time consuming but well worth it. "Rap the pan" means to tap the pan against the inside of the stove to make sure all ingredients are spread evenly. I do it every time and also turn the pan once to ensure even baking. Make these brownies!Read more

    NARGESS, pan size is 13x18 and I think as far as "rap the pan" it means just that to hit the pan on the shelf in order to... settle the ingredients. These were so good I am afraid to make again because last time I ate almost the entire pan. Delicious!!!!!!!!!!!!!Read more

    My husband and I went to college on East Coast. Periodically, we drove to the Hamptons and stopped at "THE" food place. We... were never barefoot but loved the food. When we had the $$$, we always bought the brownies. We now followed the recipe and have relived the joy! As an aside, we made a single recipe but used ROUND CHEESECAKE PANS for baking.     These brownies were the best I've ever made...I followed the recipe to a T and they turned out wonderfully...I brought them... to work and everyone loved them..many asked me for the recipe. I don't understand how they didn't turn out for some if you follow the recipe, use the correct pan size and the correct baking time they should turn out great..I've made them a couple of times now and no problems either time.... put in the fridge for several hours before cutting.     I made these brownies twice in the last couple of weeks. The first time I followed the directions exactly. The second time... I only had about 1/2 the pecans the recipe called for and only 2T of instant coffee, but was too lazy to go the store. So I made them anyway. Both times the brownies came out absolutely great!
