Ingredients

  • 1/2 pound (2 sticks) unsalted butter, at room temperature
  • 1 1/2 cups sugar
  • 1 teaspoon pure vanilla extract
  • 2 extra-large eggs, at room temperature
  • 2 cups (18 ounces) creamy peanut butter (recommended: Skippy)
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons kosher salt
  • 1 1/2 cups (18 ounces) raspberry jam or other jam
  • 2/3 cups salted peanuts, coarsely chopped

Directions

Preheat the oven to 350 degrees F.

Grease a 9 by 13 by 2-inch cake pan. Line it with parchment paper, then grease and flour the pan.

In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and sugar on medium speed until light yellow, about 2 minutes. With the mixer on low speed, add the vanilla, eggs, and peanut butter and mix until all ingredients are combined.

In a small bowl, sift together the flour, baking powder, and salt. With the mixer on low speed, slowly add the flour mixture to the peanut butter mixture. Mix just until combined.

Spread 2/3 of the dough into the prepared cake pan and spread over the bottom with a knife or offset spatula. Spread the jam evenly over the dough. Drop small globs of the remaining dough evenly over the jam. Don't worry if all the jam isn't covered; it will spread in the oven. Sprinkle with chopped peanuts and bake for 45 minutes, until golden brown. Cool and cut into squares.

    Love these bars. Made them for a church function and have had numerous requests for them However, the Skippy peanut butter no... longer comes in an 18 ounce jar, they've reduced it to 16 ounces. Good think I'm a Jiff fan, they've kept the same 18 ounce jar avaliable!Read more

    I did not have enough ingredients in my house to make the full recipe so I decided to half this one. Also not having a... smaller sized baking dish to accomedate the half recipe I decided to use a 12 cup muffin tin. I lined them with baking cups and filled each one about half way with the peanut butter batter. I then spooned the jelly on top the dropped the remaining batter onto. Baked them for 35 minutes at 350 and they came out perfect. They all cooked evently so I avoided the issue that other cooks had with the center not firming up. They were so easy to serve this way.Read more

    These bars are so good it has become a requirement for me to bring them to my child's soccer games. One time i simply did not... have time to make them and I arrived to angry parents and crying children. Also, I like to use smucker's all natural peanut butter (The kind you need to stir.) It makes the bars so full of peanut flavor I don't even bother with the chopped peanuts.Read more

    This recipe is now a requirement for my Christmas cookie list. Friends ask for it year round. I've tried different flavors... but seedless raspberry jam is the hands down best. Wouldn't ever try to do it with jelly. A big, ice cold glass of milk is the perfect compliment to these tasty crumbly bars. I have even had one for breakfast once - it has protien, right?Read more

    I am a huge Ina fan. I own every cookbook and Tivo every episode. These looked great when she made them, but my family... doesn't care for jelly. I substituted good hot fudge sauce for the jelly. It was the kind that is solid in the jar, not Hershey's syrup. THEY WERE FANTASTIC! I have made them with the hot fudge for the last 3 years and they are always gone.
