Ingredients

  • 1 pint fresh strawberries
  • 2 half-pints fresh raspberries
  • 2 half-pints fresh blueberries
  • 2 half-pints fresh blackberries
  • 1/4 cup sugar
  • Vanilla bean, split and seeds removed

Directions

Preheat the oven to 450 degrees F.

Place the strawberries, raspberries, blueberries and blackberries on a sheet pan and toss with the sugar and vanilla bean seeds. Roast in the oven for 20 minutes. Cool to room temperature before serving.

    Like other comments, I use what's available at the market, and I've also used frozen berries. I just toss in a little... vanilla extract, and I think I once used Grand Marnier. Sometimes I just put on ice cream, other times I have brought over for dessert at friends (excellent with Lemon Sorbet) and when I only have plain yogurt, I add some berries or the juice for a tasty breakfast!Read more

    I only had strawberries, blueberries and blackberries. I was only making it for my husband and myself so I just put an... amount in a small glass cooking dish and sprinkled with little sugar. I did not have vanilla beans so I just drizzed some good vanilla over the top, baked at 400 for 20 minutes. I let them cool while we ate dinner and then poured them over vanilla ice cream with a dollop of lite cool whip. My husband and I both loved this treat and we will make this again and again. I also plan on using this for company and serve it with fancy cookies for dessert. Thanks again Ina ! You are the best. (^_^)Read more

    sounds fantastic however i am a berry - citrus freak, going to try this with lemon, maybe orange zest so will probably omit... the vanilla -just wondering if anyone else has tried citrus. I do a lemon blueberry tart and vanilla seems to clash with the lemon, much better without.Read more

    I have "roasted berries" ever since I saw Ina do this on the show. The first time I used the whole assortment of berries... which can be somewhat pricey and I roasted them in a roasting pan per others suggestions. I have never thought about roasting berries but it truly is easy and does not take much time. I now sometimes just use strawberries and/or blueberries or whatever is on "special" at the supermarket. I have served them over angel food cake, pound cake, and over ice cream and then I sometimes put a dollop of whipped cream on top. Fantastic.............. Thanks Ina Read more
