This is delicious served with curries and other spicy Asian dishes.
Ingredients
- 1 1/2 cups long-grain white rice, rinsed
- 1/2 cup coconut milk
- 1/2 cup chicken or vegetable stock
- 1 tablespoon vegetable oil
- Zest of 1/2 lime
- 1/4 bunch fresh cilantro, chopped very fine
- Special equipment: rice cooker
Directions
Place the rice, coconut milk, stock, oil and 2 cups water in the rice cooker. Cook according to the machine instructions. Stir in the zest and cilantro.

The name for this recipe is perfect. The coconut milk gives a background of coconut, so it is not overpowering. It went very nice with the Chicken Curry. I will definitely make this again. Next time I will try it with Basmati of Jasmine rice.

This was very tasty! And it was also very simple to make--I didn't have a rice cooker, so I made it on the stovetop.

Yum. I used long grain basmati brown rice to up the fiber content. Made it with the chicken curry, and it definitely added depth of flavor. I didn't have a rice cooker so I made it in a dutch oven.
