This is delicious served with curries and other spicy Asian dishes.

Ingredients

  • 1 1/2 cups long-grain white rice, rinsed
  • 1/2 cup coconut milk
  • 1/2 cup chicken or vegetable stock
  • 1 tablespoon vegetable oil
  • Zest of 1/2 lime
  • 1/4 bunch fresh cilantro, chopped very fine
  • Special equipment: rice cooker

Directions

Place the rice, coconut milk, stock, oil and 2 cups water in the rice cooker. Cook according to the machine instructions. Stir in the zest and cilantro.

    Great tasting rice. Made with Melissa's Easy Chicken Curry with vegetables recipe. Perfect complement to the dish. Very good!!!!

    LOVE LOVE LOVE this rice!!! thanks Melissa easy and very yummy! I made it the first time with the easy chicken curry and it was Awesome!

    Wow! I have made this rice four times, and it has been very,very good. My husband and I use it alot. MY rice cooker is like magic, it is so quick. Thanks Melissa!
