Ingredients
- 1 tablespoon unsalted butter
- 2/3 cup mini-marshmallows
- 2 cups cooked rice (any)
- Nonstick vegetable oil spray
- 1 banana, thinly sliced
- 1/2 pint fruit medley, like strawberries, pineapple, kiwi, and cantaloupe
- Thinly sliced mini chocolate chips and toasted shredded coconut, for topping sushi, optional
- Special equipment: Nigiri sushi mold or plastic ice cube tray
Directions
To make sweet sticky "sushi" rice: In a medium saucepan over medium-low heat, melt the butter and marshmallows until completely soft. Remove from the heat and stir in the cooked rice until well blended. Spray the nigiri mold or ice cube tray lightly with nonstick spray. Take slices of the fruit medley and place in the bottom of the mold or ice cube tray. Spoon in rice and press gently into the fruit. Unmold the "sushi" and top with mini chocolate chips and toasted coconut, if desired.

I made this using another reviewer's idea. I doubled the butter and the marshmellows and added a teaspoon of vanilla (you might want to use a little less. Also, I bought a pint of manager's special mixed fruit for $2.50. I only needed about 1/4 cup. I used an ice cube tray and they came out fine. I sprayed the ice cube tray liberally. They were awesome. We will be making these often.

I bought a sushi press on Amazon for $3 and change (free ship too! specifically so I could make these for my kids. I was so excited to pop these out, but my oldest (he's 5 wouldn't touch them. It made me so sad! :( The rest of us ate them. The recipe does need a little tweaking. It needs more sugar; basically taste like rice with fruit on top, no sweetness at all. I think next time I'll double the marshmallow and add a splash of vanilla. I think that'll do the trick!

To Lulugurl84 To keep the sushi from sticking spray the tray with non-stick spray, and after you have spread the mixture on tray, spray the tray grid and press against the mixture it will keep the rice from sticking to the grid. I also have cut the mixture with a moist knife or spray the knife. And store individual squares wrap in wax paper. To unmold I place the tray in 1/2 inch warm water to loose it, inverted it and gave it a big slap on top. I was lucky, it came loose and I was able to remove the grid. But I did better w/o the grid and cut them in different shapes of cookie cutters.
