Ingredients
- 2 pears, cored, peeled, and diced
- 1/4 cup olive oil, divided
- Kosher salt and freshly ground black pepper
- 1 head red or green lettuce, washed and dried
- 2 tablespoons red wine vinegar
- 1 teaspoon Dijon mustard
- 2 tablespoons slivered almonds, toasted
- 2 green onions, finely chopped
- 2 tablespoons crumbled blue cheese
Directions
Preheat the oven to 400 degrees F.
On a parchment-lined baking sheet, toss the pears with 1 tablespoon olive oil, salt, and pepper. Place in the oven and bake until the pear edges are golden, but the pieces are still firm, 12 to 15 minutes, turning halfway through. Tear the lettuce into bite-size pieces and place in a salad bowl.
In a small bowl, whisk together the vinegar and mustard and drizzle in the remaining 3 tablespoons olive oil to make an emulsion. Season with salt and pepper and pour over the salad. Sprinkle with the pears, almonds, green onions, and blue cheese crumbles, and serve.

This salad is really delicious. The roasted pears make it. I used red pears which worked well. They stayed firm and didn't get mushy. The blue cheese was perfect with them. My family really liked this salad. Will definitely make again.

This was so simple to prepare and so elegant to serve. I used bosc pears and they did take a bit longer to brown, but stayed at a perfect firmness. My meat eating husband devoured his plate and raved at just how good the salad was. I can see adding some grilled chicken to make a complete mealfor him the next time. The salad alone was all I needed.. Excellant!

I thought this was excellent. Had trouble browning the pears as you did not say what temp to cook them at. I started at 350 and they weren't browning so I turned it up to 425 and still no browning effect. I did not want to have mushy pears so I topped them off in the broiler. I liked every aspect of this salad and I think if I would have left any ingredients out it would not have been as good, EXCELLENT! We will be making this one again.
