The secret to these baked fries being a successful fakeout to real fries: the paprika enhances the golden fried coloring, the sugar helps crisp up the outer coating of the potato, and the salt.

Ingredients

  • 3 large baking potatoes, peeled
  • 2 tablespoons vegetable oil
  • 1 teaspoon white sugar
  • 1/2 teaspoon paprika
  • Kosher salt

Directions

Preheat the oven to 400 degrees F.

Cut the potatoes into "fries" by slicing them lengthwise 4 times, and then slicing each slice another 4 or 5 times. Mix the oil, sugar and paprika in a bowl or large freezer bag. Toss the potatoes in the oil and sugar mixture and transfer to a baking sheet in 1 layer. Sprinkle with salt on both sides. Bake 30 to 40 minutes, turning the fries over with tongs about halfway through.

Fabulous! I am making these for the second time, with cayenne and Old Bay seasonings. They come out to crispy and light and tasty and irresitible! The sugar is scary but it IS what makes these oven fries so perfect and it's such a teeny bit. Try 'em, you'll like 'em!

These were so good! I couldn't believe how much they tasted like the fries that I buy and keep in the freezer. You definitely need to make sure to spray your pan really good (I used foil but still sprayed the foil. I'll definitely make these again.
