Ingredients

  • Seeds from 1 large pumpkin, rinsed and dried
  • 2 tablespoons olive oil
  • Salt and freshly ground black pepper

Directions

Preheat the oven to 375 degrees F.

Scatter pumpkin seeds onto a sheet pan in a single layer and drizzle with olive oil. Sprinkle with salt and pepper and toss to coat. Bake for about 7 minutes, until light brown and crispy.

    Simple, quick, easy... and healthy! These were delicious. Mine needed about 9 minutes, they were too chewy at 7, but they were still so good.

    The recipe is great. I actually forgot to turn on the timer but was working in the kitchen and smelled a roasting smell so I pulled the seeds out. They were perfectly toasted. Great recipe!

    I think the temp (375 degrees is too high for me. By the time the seeds were cooked enough to have a good crunch, the outside was too brown and almost burnt. Next time I will try this again with a temp of about 300 degrees for 10 minutes and adjust cooking time as necessary.
