Ingredients

  • 1/2 cup butter, room temperature
  • 1 1/4 cups sugar
  • 1 egg
  • 1 cup buttermilk, room temperature
  • 1 teaspoon vanilla extract
  • 1 3/4 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 1 1/2 teaspoons baking soda
  • 1/2 teaspoon baking powder
  • Pinch salt

Directions

Filling:

  • 4 ounces cream cheese, room temperature
  • 1/2 stick unsalted butter, room temperature
  • 2/3 cup confectioners' sugar
  • 1/4 cup canned pumpkin puree
  • 1/4 teaspoon ground cinnamon
  • Pinch salt

Preheat oven to 400 degrees F.

Using a stand mixer, add the butter and sugar and beat together until light and fluffy. Add the egg, then the buttermilk and the vanilla. Whisk together the flour, cocoa powder, baking soda, baking powder, and salt in a medium bowl. Add the dry ingredients in increments to the wet ingredients. Mix until just combined.

Drop heaping tablespoons of the batter onto parchment lined sheet trays, leaving a 2-inch space between each cookie. Put in the oven and bake for 8 minutes. Remove from oven and let cool on rack.

Beat together the cream cheese and butter, in a small bowl, until smooth. Slowly add in the confectioners sugar. Once smooth, add the pumpkin puree, the cinnamon and a pinch of salt. Beat until smooth and well mixed.

To assemble the cookie, spread a heaping tablespoon of the filling to the flat side of a cookie and sandwich with another. Repeat with the remaining cookies. Transfer to a serving platter and serve.

    I fixed the recipe as suggested in the other reviews and they were wonderful! I used 1 1/4 cup sugar and 1/4 cup of cocoa... and they were prefect. I also doubled the filling to make sure that there was enough for all of the pies. They were a hit and I will be making them again!Read more

    Beware of incorrect measurements

    I actually made this recipe twice because I thought I did something wrong the first time when the moon pies didn't turn out. ... Come to find out after reading others' reviews, it wasn't just me. Make sure to increase the sugar to 1 1/4 cup and hopefully all will be good. Unfortunate that food network can't get measurments correct, don't they go over these for typos before posting??Read more

    Bad Ingredient Amounts

    I made this with my daughter Sunday and we noticed the ingredients seemed off, but considering the source we decided to make... it as it called for. Bad move. Dry hard and bitter cakes... the icing is delicious however, and I'll use that again, perhaps for a filling for a pumpkin roll. Too bad - time and money wasted.     I haven't made this recipe nor will I since several viewers point out an error with the quantities. I sent an e-mail to... customer service complaining about the measurements for the ingredients being incorrect. I suggest you all do the same. At the bottom of the page it says contact us, us that to send your complaint. With people being tight with money, and not to mention the time that goes into making the recipe, they need to know their viewers are not happen. And like in my case I work during the day so I can't see the shows, and even though I am what I consider and experienced cook, sometimes not all errors can be caught and for those of us views that can't see the show, recipes need to be accurate and easily understood by someone who does see the show.Read more
