Macaroni and Cheese with Potato Chip Crust

Ingredients

  • 6 tablespoons butter
  • 1/2 cup all-purpose flour
  • 4 cups milk, warm
  • 1 teaspoon dry mustard
  • 1/4 teaspoon freshly grated nutmeg
  • 1/4 teaspoon cayenne pepper
  • Dash salt and freshly ground black pepper
  • Dash hot sauce
  • Dash Worcestershire sauce
  • 3 cups shredded Cheddar
  • 1 pound cavatappi pasta, cooked al dente
  • 1 cup crushed potato chips
  • 5 slices cooked bacon, crumbled
  • 1/2 cup freshly grated Parmesan, for topping

Directions

Heat oven to 350 to 375 degrees F.

Melt 6 tablespoons butter in a large saucepot over medium heat. Add flour and cook, stirring, for 1 minute. Whisk in the warmed milk and bring to a boil, continue to whisk constantly. The mixture will thicken as the heat increases. Continue to stir while adding the dry mustard, nutmeg, cayenne, salt, pepper, hot sauce and Worcestershire. Stir in the 3 cups of Cheddar until it melts.

Pour the cheese sauce over the pasta and add to a 3 quart casserole dish.

Sprinkle the chips, bacon and Parmesan on top and bake for 35 minutes.

    I made this for Thanksgiving 2 years ago and my husband request it every holiday now. I initially thought it was my aunts... recipe until I lost it and needed it again and she told me it was on your website. She didn't have anything to write it down with so she left out a few of the ingrediants but the basic stuff is still in there minus the cayenne, hot sauce and worcheshire sauce, it was great.     This was the most delicious macaroni and cheese dish I have ever made. I'm not sure what the others are talking about... regarding a bland taste. They must not have followed the recipe very closely! It was full of flavor. I served it to a crowd of 17. I doubled the recipe and it was gone at the end of the evening.     I followed the recipe it was great. I increased the amount of hot sauce and cayenne pepper and I also use center cut thick... bacon it was great. I really enjoyed the underling heat from the hot sauce and other spices. It was even better the second day when the flavors had a chance to meld. My wife and I have a rating system for new recipes, it is very easy. After you take the first bite if we start commenting about this or that or it seems to need something it becomes a zero.     I made this for Christmas and since everyone said it was bland, I used mont. jack cheese with it and put in more of the... spices it called for. It was still bland and mine dried out. I had left overs and added some more of my own spices and sour cream and it still tasted bad. I will not be making this one again. Why is it so hard to find a good mac and cheese recipe?Read more
