Ingredients
- 6 small Kirby cucumbers, sliced on an angle or, 1 large seedless cucumber, thinly sliced on an angle
- 1 small bunch scallions, cut into long, thin slices on an angle
- 2 bay leaves
- 1 red chile pepper, thinly sliced on an angle
- 1/4 cup chopped dill leaves
- 1/2 cup sugar
- 2/3 cup rice wine vinegar
- 2 tablespoons tamari sauce
Directions
Layer the cucumbers, scallions, bay, chile pepper and dill in a storage container with a tight fitting lid.
In a small saucepan over low heat add the sugar, vinegar and soy sauce. Simmer until the sugar dissolves. Pour the hot brine into the cucumber mixture and cover with a lid. Let marinate for 10 minutes. Stir the mixture every few minutes.

Easy to make! I didn't add the pepper but the recipe still came out with great flavors. I did use the suggestions to add garlic and decrease the sugar a bit. I also used ponzu sauce instead of tamari. Everyone loved and it fit right in with our Asian dinner theme!

Was excited to try this recipe..obsessed with pickles. I followed the recipe exactly the first time and they were a little too sweet for my taste and not enough saltiness. I made them a second time and used less sugar and I added a tablespoon of salt to the cucumbers before adding the vinegar. I also took some suggestions from another review and used yellow onions instead of scallions and added two cloves of garlic to the vinegar as it was heating up. Much better the second time around.
