Ingredients

  • 1 package 8-inch bamboo skewers
  • 1 pint cherry or grape tomatoes
  • 2 (1 pound) tubs bocconcini (small balls of fresh mozzarella), drained
  • 24 leaves fresh basil
  • Extra-virgin olive oil, for drizzling
  • Salt and pepper

Directions

For caprese sticks, skewer tomatoes and bocconcini bites, placing basil leaves between them. Drizzle these sticks with extra-virgin oil and season with salt and pepper, to your taste.

    Tasty and delish, but pretty low on flavor when made as directed. I even purchased the mozzarella that was marinating in olive oil and spices, but we had to drizzle some balsamic vinaigrette over them to increase the 'wow' factor. Would make again, but a tad spendy!

    I just don't think you could ever go wrong w/fresh ingredients. Especially if they are tomatoes, mozzarella, basil, & olive oil together!

    My sister made these and they were a HUGE hit! She is asked to make them all the time. She also serves them with store bought pesto as a dipping sauce...SOOO good!
