Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 4 scallions, finely chopped
  • Salt and freshly ground black pepper
  • 1 1/2 cups chicken or vegetable stock
  • 1 single-serve bag green tea
  • 2 tablespoons honey
  • 1 1/2 cups couscous
  • 1/2 cup finely chopped mint leaves, a couple of handfuls
  • 1/2 seedless cucumber, peeled and chopped
  • 1 lemon, juiced
  • 1 lime, juiced
  • Salt and freshly ground black pepper

Directions

Heat the olive oil in sauce pot over medium heat and add the scallions. Season with salt and pepper and saute 2 to 3 minutes. Add stock and bring to a boil, secure tea bag to handle of the pot, and let steep for 1 minute. Remove the tea bag, stir in honey and couscous. Turn off the heat, stir in mint, and cover the pot. Let couscous stand 5 minutes, then fluff with fork and transfer to a serving bowl. Add the cucumber and lemon and lime juice. Season with salt and pepper, to taste, toss to combine and serve.

    This is a really simple idea and a great way to make couscous even more versatile. I've made this a few times now because the first time I made couscous, my husband said he didn't like it so I tried again. When I did it this way, with the green tea, he changed his mind and asked me not to make couscous "that other way" ever again. I did try it once with a green chai tea bag and no mint and that was also lovely. Go nuts with this idea, you'll learn some cool things!

    Very good recipe. A few minor adjustments suited my friends and I to a T, no pun intended, and all agree it is a keeper.

    My kids asked for Couscous for dinner thinking it sounded excotic. I was thirlled to find a good recipe for them that was healthy and had familar ingredients for them. We modified this a little, (no green tea, mint or lime and switched to basil with garlic and they loved it. We'll be eating this again and again.
