Ingredients

  • 3 pounds sweet potatoes, peeled and cut into chunks
  • 1/2 stick butter
  • 1 banana, sliced
  • 1 orange, zested and juiced
  • 1 cup chicken stock
  • 1/2 cup brown sugar
  • 1/2 teaspoon grated nutmeg
  • Salt and pepper

Directions

Boil potatoes until tender, drain and reserve. Return the pot to the stove top over medium heat. Add butter and bananas to the pot. Cook bananas 5 minutes and add the juice of 1 orange to the pot, reserve the zest. Allow the juice to cook out, 1 minute. Add potatoes to the pot and the stock and sugar. Mash potatoes, banana, stock and sugar together until well combined. Season with nutmeg, salt, pepper and orange zest, to your taste. Mash to combine spices and serve.

    Not a sweet potato person, but now things have changed. Used 1/3 cup brown sugar (not 1/2 cup) Used milk instead of... chicken stock Used a frozen banana (really ripe) Something about the banana/sweet potato combo that makes this recipe a knock out! Read more

    I loved this recipe and have passed it around to a few of my co-workers and family. However, instead of using chicken... stock, I used the heavy whipping cream and eyed the amount I put in so as not to make it soupy. I also added a couple of dashes of cinnamon and no salt. Read more

    This recipe has just the right amount of orange and banana flavor. I would use a little less chicken stock than the recipe... calls for, or as another person suggested, subsitute cream. The consistency was a little too much like baby food, and next time will try to make the dish thicker. All in all, the sweet potatoes had a great taste and were just as good the next day!Read more

    I made this for a Thanksgiving get together and it was a FLOP! I followed the instructions to a T, but the flavors did not... go well together. The potatos ended up bitter and nasty. The bannana, orange and chicken flavors were all fighting with each other and it was absolutly horrible. I was embarassed to have taken this recipe.Read more
