Ingredients

  • 1 1/2 cups plain bread crumbs
  • 1 handful fresh flat-leaf parsley
  • 2 large cloves garlic
  • 1 lemon, zested
  • Coarse salt
  • 4 (6 to 8-ounce) cod fillets
  • Extra-virgin olive oil

Directions

Preheat oven to 400 degrees F.

Place bread crumbs in a shallow dish. Pile parsley, garlic, lemon zest, and a little coarse salt on the cutting board. Finely chop the lemon-garlic mixture, then combine with plain bread crumbs.

Brush the top of each fillet with olive oil and dip in to the bread crumb herb mixture. Brush a little bit of olive oil in the bottom of a baking pan then place fillet in the pan, crust side up. Roast fillets in oven until firm to the touch, about 12 to 15 minutes.

    I don't care for cod but I substituted crushed French's Fried Onions for the breadcrumbs and I liked it. It was very tasty... and not heavy. I had no problem with browning the crumbs either.Read more

    Lets be honest.... A breaded cod dish is not going to blow the doors off anyones taste buds. Given that this recipe is better... than average. My only suggestion is to add additional spices (paprika, cay. pepper, whatever) to the mix to personailze it to your tastes. Read more

    This is easily the best Cod dish I've ever eaten. It was a huge hit with the entire family. I did make a slight alteration:... Since the Cod I had was a very thick, large piece, I baked at 450 degrees for about 15 minutes. I also worked enough olive oil into the bread crumb mixture to be a medium meal that wouldn't quite stick together when pressed. I drizzled the olive oil over the Cod and salt and peppered each side. I then mounded all the topping on the pieces and patted it down firmly. The result was a beautiful piece of fish with a flavorful crumb topping that browned perfectly. We squeezed fresh lemon juice over the fish just before serving. It was not only delicious but beautiful! This will become a weekly standby in my family and I wouldn't hesitate to serve it for a dinner party. It really is quick and easy too. I'm over the moon about it and Cod is usually NOT a favorite fish of mine! Fantastic!Read more

    I followed some of the other recommendations and mixed olive oil into the breading, rubbed a bit more onto the fish in the... pan, then pressed the breading onto the fish. Roasted at 450 for 10 minutes, and it was perfectly cooked. Served it to fellow foodies, and they loved it. Next time I'll add more olive oil to the breading or spray it with oil once on the fish and hope the topping browns more evenly... the main reason I gave it 4 stars instead of 5.Read more
