Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1/2 cup orzo pasta
  • 1 cup white rice
  • 2 cups chicken broth or vegetable broth
  • 4 plum tomatoes, halved, seeded and finely chopped
  • 1 small onion, red or white, finely chopped
  • 1 jalapeno pepper, seeded and finely chopped
  • A handful cilantro leaves, finely chopped
  • 1 lime, zested and juiced
  • Salt

Directions

Heat the extra-virgin olive oil in a sauce pot over medium heat. Add the orzo and toast until deep golden. Stir in the rice and broth and bring to boil. Reduce the heat to low, cover the pot and simmer for 17 to 18 minutes.

In a small bowl, combine the tomatoes, onions, jalapeno, cilantro, and lime zest and juice. Season with salt, to taste.

When rice is cooked, fluff with fork and stir in the salsa. Transfer to a serving bowl and serve.

    Deeeelicious! I am on the Daniel Fast, so I substituted quinoa for the rice, and vegetable broth for the chicken broth, so these two changes shouldn't have really changed up the recipe much at all. But it turns it into a vegan recipe and a complete protein meal. : Yes, to all the other adjectives used in previous reviews: fresh, different, light, easy.. if it were a specialty in a restaurant, I'd order it every time. I was worried about the jalapeno, so only used about 3/4, but didn't notice it at all, so next time (soon! I will use a whole jalapeno.

    This recipe is outstanding! Bright, fresh, flavorful, and VERY easy to prepare. My family loved it. This is as good as any rice I have had in upscale restaurants. This will definitely be my go to recipe. Knowing that Rachael likes really hot spices I used only 1/2 a jalapeno and it was not hot. Next time I will use the whole jalapeno. Rachael knocked it out of the park with this one!

    I made this tonight as a side to tacos. I thought it was great! Very flavorful and refreshing. Next time, i would use vidalia onions, not red onions. It was a little too spicy for my kids to eat because of the onions! I had always wanted to make a rice pilaf, but thought it was hard. This was extremely easy and quick!
