Ingredients

  • 1 bundle arugula leaves
  • 1 ripe bosc pear
  • 1 lemon
  • 1 tablespoon fresh thyme leaves, finely chopped
  • Extra-virgin olive oil, for drizzling
  • Salt and freshly ground black pepper
  • 8 slices prosciutto di Parma

Directions

Place arugula in bowl. Quarter the pear lengthwise and remove the core. Cut into quarters and then in half again. Dress the pear with the juice of 1/2 lemon, thyme leaves, olive oil, salt and pepper. Place a few leaves of dressed greens on each slice of prosciutto with a slice of pear and roll up into a tight bundle. Cut each bundle in half, to make 16 pieces.

    Some friends had these as appetizers for their Christmas Eve party and they were great. Not what I expected at all. They are fresh and full of light flavor. I can't wait to make it for the girls.

    Right, so this was lovely and fresh and easy to prepare. I have to admit that I did not see RR do this, so I was confused when she has us prepare the pear and dress the pear and then add the DRESSED greens to the prosciutto...wha? Sorry, I know there are only about 7 lines to this recipe so how can you mess it up...but where does she explain how to dress the greens? I winged it and it still came out quite nicely. Oh, well. I suppose I could have watched the video, but when your guests are arriving in 10 mins it's now or never. That said, I don't think I would make this again. It really didn't have the 'wow' factor I was looking for.

    I made these on a camping trip, so that tells you how easy they are. Our camping friends loved them. And they're even good for you!
