Ingredients

  • 4 Roma or plum tomatoes, halved and thinly sliced
  • 1/2 red onion, thinly sliced
  • 2 cubanelle peppers, seeded and thinly sliced
  • 1 tablespoon balsamic vinegar, eyeball it
  • 3 tablespoons extra-virgin olive oil, eyeball it
  • Salt and pepper

Directions

Combine vegetables in bowl and dress with vinegar, extra-virgin olive oil, salt and pepper.

    Rachael Ray's tomato ,Pepper and red Onion Salad is so fast and the taste is to die for. All the ingredients are usually in your kitchen and the flavour is light and summery. Calorie count is low and it makes a beautiful meal with a nice piece of grillled bass. Nancy<Ont.

    Quick, easy and refreshing. Great way to use those fresh summer veggies. For an added flair, I used the juice of one lime in place of the vinegar and added a handful of chopped cilantro... even more color and zest!
