Ingredients
- 2 tablespoons extra-virgin olive oil, 2 turns of the pan
- 1 clove garlic, cracked from skin
- 1 1/4 pounds cleaned kale, 1 large bunch, trimmed and chopped
- 1 cup dry red wine
- Salt and pepper
- 2 teaspoons lemon zest, eyeball it
Directions
Heat a deep skillet over medium heat. Add extra-virgin olive oil, 2 turns of the pan, and garlic. Cook garlic a couple of minutes while you chop kale then remove the clove. Crank heat up a notch them add greens to wilt them down, 2 to 3 minutes of turning is involved here. Add wine, salt, and pepper and reduce heat to simmer. Steep the greens in wine 10 minutes, stir in zest then serve.

I have not yet tried this recipe but plan to soon! I think the issue is Kale is bitter and tough. Try using your favorite leafy greens with this recipe, and see how it turns out if you do not prefer the flavor or texture of kale. I enjoy kale and other greens and will likely try this recipe with different varieties of greens. Hope this helps!

I made this recipe AFTER I read all of teh bad reviews it received. Though from the south, I do not like greens - not the smell, not the taste, not the texture, but decided because they are SOOOO good for you to try it. I used 1/2 cup red wine instead of a full cup and 1/2 cup chicken stock. It was not bitter - came closer to a broccoli tase and went well with the rest of the meal.

I made this recipe for my Husband who loves greens, personally I don't like them. It was a eay recipe to use, but didn't have much taste.
