Ingredients

  • 1 3/4 sticks salted butter, cut into pieces, plus more for greasing pan
  • 1 1/2 cups all-purpose flour
  • 1 1/2 cup oats
  • 1 cup packed brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • One 10 to 12-ounce jar strawberry preserves

Directions

Preheat the oven to 350 degrees F. Butter a 9-by-13-inch rectangular pan.

Mix together the butter, flour, oats, brown sugar, baking powder and salt. Press half the oat mixture into the prepared pan. Spread with the strawberry preserves. Sprinkle the other half of the oat mixture over the top and pat lightly. Bake until light brown, 30 to 40 minutes. Let cool completely, and then cut into squares.

    After looking over this recipe and reading some of the reviews, I altered the recipe by cutting the butter down to 1 stick, using 3/4 cup brown sugar, using half whole wheat flour and half all purpose flour, and I drizzled in about a tablespoon of milk after getting the butter cut in as much as I could, just to make sure the oatmeal mixture wasn't too dry due to the reduced butter. I used blueberry preserves because that's what I had on hand. The bars turned out delicious--just the right amount of sweetness and not too buttery/greasy, as some other commenters mentioned. So easy and so much better than store bought oatmeal bars!

    I first made these as part of a "sweet" basket I made for my father and he went crazy. Now he always asks for these. They are super easy to make and are oh so yummy. Nothing gets better then that!

    Will never buy store bought oatmeal bars again! Husband requests this on a regular basis for his lunches during the week. Easy to make and the house smells good too!
