Ingredients
- 2 cups leftover lasagna filling
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 2 cups diced fresh mango
- 1 jalapeno pepper, seeded and minced
- 2 tablespoons minced red onion
- 2 tablespoons chopped fresh cilantro leaves
- 2 tablespoons fresh lime juice
- Salt and ground black pepper
- 8 taco shells
- 1 cup shredded Romaine lettuce
- 1 cup grated Cheddar (regular or reduced-fat)
- 1/2 cup sour cream (regular or reduced-fat)
Spoon lasagna filling into a large skillet and add chili powder and cumin. Bring mixture to a simmer over medium heat. Simmer 5 minutes. Meanwhile, in a medium bowl, combine mango, jalapeno, red onion, cilantro, and lime juice. Season, to taste, with salt and black pepper. Serve beef mixture with taco shells, lettuce, grated cheese, sour cream, and mango salsa on the side.

Very good. My kids weren't very impressed, but they aren't familiar with mangos. I thought the salsa was definately worth making on its own. Also, I used the lasagna meat , added kidney beans, and turned the last of it into chili! Poured the chili over chips and added the mango salsa for another twist. These recipes are keepers.

I haven't had tacos in ages, and when I made this for my fiance and I, we ended up eating 5 TACOS EACH!!! The salsa is fantastic with a cool, sweet flavor but a bit of a kick. Here are the alterations that I made and loved: I did 1lb of browned ground beef instead of lasagna mix; I doubled the chili powder for the ground beef to add more flavor, put in a few splashes of hot sauce, did salt & pepper & of course the cumin. In the salsa, I added a green chili, but next time I think I will do another jalapeno to make it a little hotter. Put some hot sauce out next to the rest of the taco fixings, and it was perfect. Definitely try this one! Quick, easy & delicious!

This recipe is fantastic for those "what am I going to make for dinner?" days. It's fantastic, and the spice from the jalapeno gives it an amazing kick.
