Ingredients

  • 2 teaspoons olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 cup chopped roasted red peppers, drained (from water-packed jar)
  • 1 teaspoon liquid smoke
  • 8 (6-inch) corn tortillas
  • 1 1/3 cups shredded pepper jack cheese

Directions

Preheat oven to 400 degrees F.

Heat oil in a large skillet over medium heat. Add chicken and saute 5 minutes, until browned on all sides. Add roasted red peppers and liquid smoke and cook 1 minute to heat through. Arrange tortillas on a flat surface. Top each tortilla with an equal amount of chicken mixture, to within 1/4-inch of the edges. Top chicken mixture with cheese (1/3 cup of cheese per tortilla). Roll up tortillas and place on a baking sheet. Spray with cooking spray and bake 10 minutes, until cheese melts.

    This recipe turned out to be one of the simplest and tastiest recipes I have made using foodtv.com... I added just a dash... extra liquid smoke and did sprinkle some cheese on top and they held together very well. Perfect recipe to nix a mexican food craving in a semi healthy way!Read more

    We love these, yes the tortillas crack especially if they aren't fresh but they are delicious and go great with the bean dip.... Just put come cheese on top to help hold together. Another hit Robin - what I like about your recipies are they at least try to be somewhat healthy!Read more

    I made these after seeing the show. I microwaved the corn tortillas in paper towels and sprayed them with cooking spray, but... they still fell apart. To tell you the truth though, it didn't even matter. They were still delicious! I also put some shredded cheese on top once they were in the baking dish. Yum yum! Next time I think I'll try some of the other reviewers ideas, like adding spicy peppers :)Read more

    A few tips...

    This is one of my favorite dinners, so easy to make, tasty and healthy! I make this quite a bit and thought I'd pass along... some tips Robin used on the show when she made these: 1) use fresh corn tortillas, 2) before filling tortillas, wrap in one layer of damp paper towels, place in an open zip top bag and microwave for 30 seconds. This makes them soft and easier to work with! 3) after rolling up filling, I lightly spray each taquito with non-stick spray. These go great with Robin's Chunky White Bean Avacado Dip, and a side of mango slices. Yum!Read more

    I had read the reviews before I decided to makes these last week when I was making my grocery list but when I made them... tonight I did not re-read them to make sure I followed some of the others advice. The corn tortillas fell apart and it was hard to keep anything inside. I was able to put it all back together and cook them but found that the corn tortilla just didnt taste very good to me. I might try this again with the advice of using flour tortilla and using some more seasoning. Read more

    The flavor was excellent! To avoid issues with the corn torts falling apart, just heat them up in a skillet for a minute or... so before filling them. I placed a toothpick in them to keep them together while baking. Worked out great. They were really yummy!Read more
