Ingredients

  • Cooking spray
  • 1 1/2 cups cooked chicken thigh meat, chopped
  • 1/2 cup sour cream
  • 1/3 cup shredded Mexican cheese blend (recommended: Kraft or Sargento)
  • 1 (4-ounce) can diced green chiles
  • 2 tablespoons chopped fresh cilantro leaves
  • 1 teaspoon ground cumin
  • 1 package egg roll wrappers
  • 1 cup honey
  • 3 tablespoons chopped pickled jalapenos
  • 1 tablespoon cider vinegar

Directions

Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.

In a large bowl, combine chicken, sour cream, cheese, green chiles, cilantro, and cumin. Mix well to combine.

Arrange egg roll wrappers on a flat surface. Place a small amount of filling in the lower third (towards 1 corner) of each wrapper. Fold over the bottom corner of the wrapper, tightly roll up 1 turn and then fold in the sides. Dip your finger in water and run it along the corner and edge. Tightly roll up the rest of the way, sealing the edges and seam shut. Place "straws" on prepared baking sheet and spray with cooking spray. Bake 10 to 12 minutes, until golden brown.

Meanwhile, in a small bowl, combine honey, pickled jalapenos and vinegar. Mix well and serve alongside straws.

    My aunt and I make this all the time. We've made a few changes but the end result is ALWAYS the best ever! If we prepare the... mixture about 2 hours early and let it set in the fridge, the flavor just explodes in your mouth. We also add a LOT of jalapenos in the sauce.     This recipe is so good! I did notice that many found the filling "chewy." This could be because if you add too much sour... cream, it will become thick and chewy. Measure very carefully! Browning of the egg roll wrappers was also a concern. I cooked the finished egg rolls on Silpat mats and turned once during cooking. An extra minute or two was required to brown the outside. Thank you for such a great recipe. My husband loved it and so did I. I cooked the chicken a few days ahead, then assembled the day we ate them! So quick and easy! Read more

    This recipe had a very impact in my family. We always trying to create new recipes and when I sod this in your show I really... wanted to try it. Love the flavors; the whole combination with the sweet jalapeno sauce is just delightful. Very good, delicious and tasty is what my son (5year old will said) my husband doesn't like spicy stuff much, but he really liked the sauce. I have made them twice this week. The egg wrappers are the best. My first time I did them with regular cheese I didn?t have the Mexican cheese and they were good, the second time I did with the Mexican cheese and they were even better.     I just made this recipe and was very disappointed. The filling was OK - bland even with the chilis - needs more spice for my... taste. The egg roll wrappers were like eating notebook paper. Who knows maybe another brand would be better. The dipping sauce was way too sweet. Salsa or queso would have been a better match. I would not use this for a party or get together until a better wrapper has been found.Read more
