Ingredients

  • 1/4 cup quick-cooking oats
  • 2 tablespoons all-purpose flour
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 1/4 pounds chicken tenders (rib meat) or boneless, skinless chicken breasts cut into thin strips
  • 1/3 cup orange marmalade
  • Cooking spray

Directions

In a large zip-top plastic bag, combine the oats, flour, oregano, thyme, garlic powder, onion powder, salt, and black pepper. Seal the bag and shake to combine. Using a brush or spoon, coat the chicken pieces all over with the marmalade. Add the chicken to the oat mixture, seal the bag, and shake to coat the pieces evenly.

IF YOU'RE STOPPING HERE:

Refrigerate the chicken for up to 3 days or freeze for up to 3 months. Thaw completely in the refrigerator or microwave for about 4 minutes on LOW before baking.

WHEN YOU'RE READY TO EAT:

Preheat the oven to 400 degrees F. Coat a large baking sheet with cooking spray. Transfer the chicken pieces from the bag to the prepared baking sheet and spray the tops of them with cooking spray. Bake until golden brown and cooked through, about 20 minutes (no need to turn them). Serve hot.

    II just started watching Robin and this was my first recipe try.....I did my version and coated the chicken with the... marmalade and just rolled it in the oats...sprayed the pan and chicken.....was awesome.....I was afraid the other ingredients might spice it up too much....tasted great just with the marmalade...would recommend this to anyone.Read more

    I've made this recipe a few times now. I can understand why a lot of people don't like them, my husband included. It is an... interesting combination of flavors, but personally I like it. Give it a try, but if you're a picky eater, this recipe is probably not for you. Read more

    This was the worst chicken dish I have ever tasted. Comlete waste of time, ingredients, and money. It looks just like it... tastes - nasty.     I think the next time I make these I won't use as much oregano. Some are complaining that 1/4 cup of oats didn't cover all... the chicken... use your heads, guys... Add more oats to the bag! I didn't pay attention to the amount of oats the recipe required (or how to coat them for that matter) because I just poured a bunch of oats onto a plate and after coating the chicken with marmalade, I pressed each side into the oats... they were covered. I like the suggestion to use Panko breadcrumbs... but I always have oats in my cupboard so when it comes down to making a special trip to the grocery store, I'd rather just use what I have because they turned out well with the oats.Read more
