Ingredients
- 2 cups cubed pineapple (fresh or canned in juice)
- 1/2 cup chopped onion
- 1/2 cup pineapple juice
- 1/3 cup raisins
- 2 tablespoons brown sugar
- 1 tablespoon white wine vinegar
- 1 teaspoon ground cumin
- 2 tablespoons chopped fresh cilantro leaves
- 2 teaspoons olive oil
- 8 slices baked ham (each about 1/2-inch thick)
Directions
In a medium saucepan, combine pineapple, onion, pineapple juice, raisins, brown sugar, vinegar, and cumin. Set pan over medium-high heat and bring to a simmer. Simmer 15 minutes, until mixture thickens and reduces. Remove from heat and stir in cilantro.
Meanwhile, heat oil in a large skillet over medium heat. Add ham slices and cook 2 minutes per side, until golden brown. Serve ham slices with pineapple chutney spooned over top.

This chutney is terrific. It doesn't keep very well, so eat it all. It's delicious. My son was on his way out the door yesterday to meet a freind for dinner, but once he stopped to eat one slice of ham with the chutney, he felt compelled to finish three more slices of ham plus chutney.

Just a perfect quick meal using common leftovers to create something that feels special. Absolutely delicious with minimal fuss.

I am not one to follow a recipe so I decided to do a slight twist on this recipe. Instead of serving this dish with ham, I grilled pork tenderloin medallions wrapped in bacon. For the actual chutney, my grocery store was out of cilantro so instead I added half a jalape?o for a little spice, more onion, less pineapple and more brown sugar. My husband found it to be delish and said I could definitely make it again. Thanks for the idea!
