You can create up to five timers

Ingredients

  • Cooking spray
  • 8 (5-ounce) skinless chicken breast halves (with bone)
  • Salt and ground black pepper
  • 1 cup orange marmalade
  • 1 tablespoon reduced-sodium soy sauce
  • 1 teaspoon liquid smoke

Directions

Preheat oven to 400 degrees F. Coat a large roasting pan with cooking spray.

Season chicken all over with salt and black pepper. Arrange chicken in prepared pan and set aside.

In a small bowl, combine orange marmalade, soy sauce and liquid smoke. Mix until blended. Pour mixture over chicken.

Roast 35 minutes, until chicken is cooked through. Serve 4 chicken breast halves with this meal and refrigerate remaining chicken until ready to use.

Yield: 4 servings (with leftovers for additional meals such as Robin's Chicken Quesadillas and Thai Chicken Salad)

    While this was by no means a bad dish, my husband and I agreed it was just bland and boring. If I ever tried it again, I'd sear the chicken breast first in a skillet and then pour the sauce over them to finish in the oven. Maybe the sauce would have held onto the chicken better then and given it more flavor. Nice recipe idea, but poor execution.

    This recipe is so easy & so tasty! Whole family liked the flavor of the chicken. I used the chicken leftover for Robin's Chicken taquitos with roasted red pepper, also a thumbs up!
