Ingredients

  • 1 tablespoon olive oil
  • 2 cloves garlic, minced
  • 2 teaspoons sugar
  • 1/2 teaspoon crushed red pepper flakes
  • 8 cups chopped broccoli rabe
  • 1 tablespoon rice vinegar or white wine vinegar
  • Salt and ground black pepper

Directions

Heat oil in a large skillet over medium heat. Add garlic and cook 1 minute. Add sugar and red pepper flakes and cook 1 minute. Add broccoli rabe and vinegar. Cook 3 to 5 minutes, or until wilted. Season, to taste, with salt and black pepper.

    I had about 4 cups of broccoli so I cut them into smaller pieces. I did a stir-fry in my wok and to cook the broccoli al dente, I covered it for about a minute at the end. It was perfect. I have 24 other broccoli recipes we've liked but always want to try new recipes. This was super easy and so tasty!!

    I do not recommend this recipe. I'm not sure what is was, but I used the white wine vinegar and it seems there was an adverse chemical reaction between the white wine vinegar and the broccli rabe; it enhanced the bitterness, rather than reduced it. I was assuming b/c the recipe calls for sugar it would reduce the bitterness. I think I'll just stick to olive oil and garlic next time I sautee broccli rabe. .
