Ingredients

  • 1 (8-ounce) roll refrigerated sugar cookie dough
  • 1/2 cup pistachios, lightly chopped
  • 1/2 cup dried cherries
  • 1 (11-ounce) bag white chocolate chips

Directions

Preheat the oven to 350 degrees F.

Open sugar cookie log and press into a rectangle on cutting board. Add pistachios and cherries, press into dough and then re-shape into a log. Slice into 1/4-inch thick rounds. Transfer cookies to a baking sheet.

Bake 7 to 11 minutes, until golden around the edges. Transfer to wire racks to cool completely.

While cookies are baking, melt white chocolate chips in a double boiler or bowl over simmering water.

When cookies are cool, dip bottom half of cookies into melted white chocolate and place on waxed or parchment paper to cool.

    I used the Pillsbury pre-made dough. I added Craisins and pecans. Dough would not cut for me. Ended up using a cookie... scoop, then patting them down with the bottom of a glass. Dipped 1/2 cookie in white chocolate, which ended up being too sweet. Next time I will drizzle with white chocolate. I would also make my own sugar cookie dough.Read more

    great cookie taste but as I rolled the dough it was sticky when I rolled it up it was a mress so I just made walnut size... balls & pressed them wih a fork like peanut butter cookies ~~ no dippping too sweet I will make some more today the "new" way but with my own sugar cookie batterRead more

    I went ahead and did the store bought cookie dough. If you use freezer paper to smash the roll into a rectangle and add your... ingredience...then (keeping it all on the Freezer paper reroll the log and then stick into freezer (15 or so minutes). Take out and cut your slices and place on cookie sheet. This took care of any stick problems and gave me perfect round shape cookies! I made sure to touch the dough as little as possible...body heat tends to make it soft to quick. The Freezer paper helped with that! Enjoy! HollyRead more

    Like the gal who posted before me I too used the bagged Betty Crocker sugar cookie mix. I added the same measurements of the... cherries and pistachios that the recipie calls for, but instead of rolling it into a log or refrigerating it, I just scopped it out with an ice cream scooper (I also got 2 dozen cookies). After the cookies cooled I placed my melted white chocolate into a Ziploc bag, snipped the corner and zig-zagged it across the cookie. At my cookie swap out of 30 cookies this cookie placed 2nd! I will be adding it to my holiday list of cookies from now on!Read more

    Needs a little tweaking, but excellent cookie!

    The idea behind this cookie is simple - pre-made cookie dough and your add-ins. After I read the other reviews, I decided to... do my own tweaking - rathere than use the refrigerated cookie dough, I used the Better Crocker Sugar Cookie mix in a bag (see cake mix aisle). I followed the recipe with the pistachios and cherries, but rather than dip the cookies, I used 1/2 cup of the white chips in the mix. The bag cookie mix mixed up very well and I had no troubles with it. I rolled it into a log and put in the fridge to firm up. I unrolled and used a small cookie scoop to portion out the cookies. I got a little over 2 dozen with this method. Overall, it's a great cookie and I am proud to be featuring it this year at our 4th annual cookie swap! (If I can stop eating the dough - haha!)Read more

    Very Good Cookie...

    ...but the dough's really tough to work with. It's very sticky, despite my having kept it well chilled until it was time to... make the cookies. I did make one modification, and that was with the white chocolate: I put the melted chocolate into a zip-top bag and drizzled it onto the cookies after cutting a corner of the bag off. They have a really nice flavor. I remember saying to my husband that there were too many ingredients for the dough, but it did incorporate with minimal effort. However, I had to bake my 3rd batch for about 18 minutes in order to brown them. I found that if baked as directed, they looked almost raw, and tended to fall apart. I let them set up overnight, though, and once I was ready to transfer them into the freezer, they were good to go. It's a nice, simple holiday cookie with a pretty presentation.
