I harvested butternut squash from my Dad's garden (he plants them early summer and fall. My parents were skeptical of the flavors, but once they tried the dish, it was a hit. I used the inexpensive balsamic my Mom had on hand and it made a difference in the taste. I use high quality balsamic and fresh squash which improves the dish.
