Ingredients
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon Italian dressing mix (recommended: Good Seasons)
- 1 pint cherry tomatoes, sliced in 1/2
- 1 (15-ounce) can pitted black olives
- 4 large fresh basil leaves, finely chopped
- 2 scallions, cut in 1/2-inch pieces
Directions
In a medium bowl whisk together olive oil, vinegar and dressing mix.
Add cherry tomatoes, olives, basil and sliced scallions to bowl. Toss to combine.

Simple, elegant, and you can vary it by using different vinegars and herbs. I often thinly slice a red onion into half-moon THIN slices and add. There is rarely any left over, and this is every day cooking at it's most simplistic. In fact I think I'll make this with dinner tonight. I think I'll use calamatas .....
