Ingredients
- 2 unwaxed cucumbers
- 1 (8-ounce) container cream cheese, softened
- 1 (8-ounce) container sour cream
- 1 (3-ounce) package smoked salmon, chopped into small pieces
- 1 shallot, diced
- 1/2 lemon, juiced, seeds removed
- 1 bunch fresh dill, chopped
- Pinch salt and fresh ground pepper
Directions
Using a peeler, create stripes on the outside of the cucumber by peeling along length of cucumber, leaving every other section intact. Cut off ends of cucumber and slice into 1-inch rounds. Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice. Do not scoop all of the way through. Set aside. In a bowl, combine equal parts cream cheese and sour cream. Mix in salmon, shallots, lemon juice, salt and pepper, combining thoroughly. Transfer the mixture to a pastry bag with a star 8 tip. Pipe the filling generously into each cucumber section. Garnish with sprig of dill. As an alternative, use red pepper cream cheese.

WOW! These are Yummy! Reminds me of my favorite Sushi Roll. I followed the suggestions and added more Smoked Salmon than they called for. I also substituted Chives for Shallots as I don't particularly like Shallots. Excellent recipe. If you don't want to be super fancy you can spoon the mix into the cucumbers. Still looks nice and takes less time.

WOW!!! I make these all the time for clients, friends and family, especially in the summer. However, I use the suggestions in several reviews which give these more flavor. I too double the smoked salmon, unless I use salmon cream cheese instead of plain. I also add only 1/2 the sour cream, mix in 1 teaspoon of fresh chopped dill, 1/2 teaspoon lemon zest, as well as the lemon juice, and a pinch of cayenne. I always use an electric hand mixer or a blender to whip everything together, EXCEPT the dill...add that last. OMG! Everyone loves these appetizers, and I never have enough, even when I double the recipe! Thank you Sandra.
