Ingredients

  • 2 unwaxed cucumbers
  • 1 (8-ounce) container cream cheese, softened
  • 1 (8-ounce) container sour cream
  • 1 (3-ounce) package smoked salmon, chopped into small pieces
  • 1 shallot, diced
  • 1/2 lemon, juiced, seeds removed
  • 1 bunch fresh dill, chopped
  • Pinch salt and fresh ground pepper

Directions

Using a peeler, create stripes on the outside of the cucumber by peeling along length of cucumber, leaving every other section intact. Cut off ends of cucumber and slice into 1-inch rounds. Using a melon baller, scoop out the seeds and inner flesh from the top 2/3's of each cucumber slice. Do not scoop all of the way through. Set aside. In a bowl, combine equal parts cream cheese and sour cream. Mix in salmon, shallots, lemon juice, salt and pepper, combining thoroughly. Transfer the mixture to a pastry bag with a star 8 tip. Pipe the filling generously into each cucumber section. Garnish with sprig of dill. As an alternative, use red pepper cream cheese.

    I make a similiar appetizer recipe, except I add "Good Seasons" Italian dressing mix to the cream cheese mixture....the... seasonings within the packet provide a great punch of flavor to the cream cheese. I then spread the cream cheese over small rye bread, layer it with a thin (1/4") sliver of cucumber, then lox and then a spinkle of fresh dill on top. A friend has made these for years and they've always been the hit of the party...I just started making them on my own....so simple, elegant and always one of the first things to go!Read more

    Make sure you finely chop your salmon and shallots well or they get stuck in the Pastry Bag. Not cool !

    Love Sandra's presentation, however did find slightly on the bland side. so took it one simple step further and bought smoked... salmon cream cheese and vegetable cream cheese from the bagel store mixed together added a spritze of lemon a dash oif dill and served in the cukes.. Now THAT was tasty!Read more
