Ingredients
- 2 (24-ounce) bags microwavable peeled and cut potatoes (recommended: Ore-Ida Steam n' Mash)
- 2 cups light cream
- 1/2 stick unsalted butter
- 6 sprigs fresh thyme
- 8 ounces peppered goat cheese, at room temperature
- 2 teaspoons salt
- 1 teaspoon fresh ground pepper
Directions
Microwave the potatoes according to package directions.
While the potatoes are cooking, in a medium pot over medium heat, warm the cream with the butter, thyme, salt and pepper. Don't let it boil.
Put the potatoes into a large pot and mash with a potato masher. Strain half the cream mixture into the warm potatoes and add the cheese in chunks. Mix together, adding more cream to get a nice creamy consistency. Taste and adjust the seasoning with more salt, if necessary. Keep covered and serve warm.

I would like for it to be easier to locate a specific food item on the food network. It always takes 20 minutes to find the exact item I am looking for on the network. Ex. Prepared potatoes! Prepared potatoes from Sandra Lee. At the holidays', I make 10 to 15 lbs. of home-made potatoe salad every year. My family said they dream about my potatoe salad. Thank you Sandra Lee for making my life "taste" the same, but, semi-homedmade.

A new favorite mashed potato! Decadent, nice zing from the goat cheese. I just used regular potatoes because I forgot to grab the steam and mash bags at the store. I added a couple of sage leaves to the thyme, for a more thoroughly Thanksgiving flavor. I actually added a little more black pepper as well, because the 4 pepper goat cheese is not overwhemingly peppery. Will definitely make again.

These potatoes were really good! I didn't have peppered goat cheese but I did have "purple haze" goat cheese - flavored with lavender and other herbs. I used a little more pepper and followed the rest of the recipe exactly and it was really yummy. I will make these potatoes again!
