Sweet Potato Bread with Pecans

Ingredients

  • 2 1/3 cups sugar
  • 2/3 cups water
  • 2/3 cup oil
  • 4 eggs
  • 2 cups mashed sweet potatoes
  • 3 1/3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking powder
  • 1 cup coarsely chopped pecans

Directions

Preheat oven to 350 degrees F.

Combine sugar, water, oil, eggs, and sweet potatoes and mix thoroughly. Add dry ingredients and mix to combine. Add pecans and mix well. Divide between 2 greased loaf pans and bake for 50 minutes. Cool in pan to room temperature.

    I made this bread with 1/2 whole wheat flour, 1 cup less sugar and applesauce instead of oil and it was incredibly delicious!... Moist, just the right sweetness and great texture. I'm sure it tastes much different with oil and full sugar - but I prefer to keep it a little lighter. Read more

    I cut the recipe in half and made it in three mini-loaf pans, and it's delicious. I skipped the nuts as my boys don't like... them. I also upped the cinnamon to 3/4 teaspoon (for half the recipe.) The bread is moist and delicious. I'll definitely make it again, and next time I'll use a full teaspoon of cinnamon (for half the recipe).Read more

    Quite like pumpkin or other squash bread in texture. i should try the applesauce substitution some time, because i don't like... the general oiliness of these breads, although this one is a little less oily than others (that have 1/2 c. oil per loaf). i did add nutmeg and ginger, and would add even more ginger in the future. Seemed to be a good fit with the sweet potatotes. Also cut down the sugar, and didn't miss it. used walnuts, because they're less expensive than pecans. Read more

    I nixed the nuts and used only two cups of sugar and it turned out incredible. I had to cook it about 10 mins longer becuase... it wasn't done in the middle, but it was still great. I will definitely make it again and try using some brown sugar instead of white (recipe calls for 2 1/3 cups, kind of a lot). Great for the holidays!Read more

    The only problem I have with them is the huge amount of sugar in them. But it sure did make a lot of muffins.

    You wouldn't even know it was made with sweet potatoes. I've made it twice this week and after reading the reviews made a... couple of changes. We tried it with raisens and don't believe it needs them unless you want them. I added more cinnamon and substituted 1/2 water and 1/2 coffee liquour to make up the 2/3 cup water the recipe required. My husband loves it and requested some to take to the office on Monday.Read more
