Vietnamese-Style Sandwich: Banh Mi

Ingredients

Slaw:

  • 1/2 cup water
  • 1/4 cup sugar
  • 1/4 cup distilled white vinegar
  • 1/2 cup julienned carrot
  • 1/2 cup julienned daikon radish
  • Kosher salt

Seasoned Pork:

  • 1 teaspoon vegetable oil
  • 1 tablespoon finely chopped onion
  • 6 ounces ground pork
  • 1 tablespoon roast pork seasoning mix, available in Asian markets
  • Pinch garlic powder
  • Pinch ground black pepper

Sandwiches:

  • 4 (10-inch) baguettes
  • Mayonnaise, as needed
  • 8 thin slices Vietnamese-style pork roll (cha lua), or bologna
  • 8 slices Vietnamese-style salami, or ham or turkey
  • 4 teaspoons soy sauce
  • 1/2 cup fresh cilantro sprigs
  • 1/4 medium English cucumber, cut lengthwise into 4 slices
  • Freshly ground black pepper
  • Asian-style chili oil, to taste, optional

Directions

Make the slaw: In a small saucepan, combine the water, sugar, and vinegar and bring to a boil. Transfer the vinegar mixture to a bowl and cool. Add the carrot and daikon, mix well, and season with salt. Set aside to marinate for 30 minutes or store in the refrigerator up to overnight.

Meanwhile, make the seasoned pork: Heat the oil in small nonstick skillet over medium heat. Add the onion and cook, stirring, until soft. Add the pork, seasoning, garlic, and pepper and cook, stirring, until just cooked through, about 2 to 3 minutes. Remove the heat and set aside covered with foil to keep warm.

Make the sandwiches: Preheat oven to 400 degrees F. Slice the baguettes open lengthwise, and slather the insides with mayonnaise. Arrange the baguettes on a baking sheet and bake until hot and crusty about 5 minutes. Remove the baguettes from the oven and immediately fill each with some of the seasoned pork. In each sandwich, arrange 2 slices each of the pork roll and salami, 1 teaspoon soy sauce, 1/2 tablespoon cilantro, 1 slice cucumber, ground pepper, and chili oil, if using. Serve immediately.

    Good but Missing Key Ingredients

    First, I am Vietnamese and absolutely LOOOOOOVE Banh Mi. It is my favorite food and I traveled to Vietnam eating mostly banh... mi. The taste of the banh mi there is authentic and delicious, full of flavor yet simple and cheap. This recipe has the basic components to making a good banh mi, but it misses the key ingredients I think makes the banh mi so amazing. First, the spread--a fine blend mixture of egg yolk and oil spread on the side of the bread. Mayo does not give that authentic taste the taste bud desires. Second, the pate--it's a chicken or pork liver pate that you spread throughout the sandwich. Often, I request for extra pate and spread because I feel they really are the foundation of the baguette. Third, the hot, spicy sauce (Sriracha, a must-have in your kitchen!) gives a good spicy kick. Aside from missing these key ingredients, the recipe looks good. Often, restaurants change around the recipe or miss the key ingredients that make the baguette what it is. Those carts that used to sell the banh mi is now replaced by shops and the quality has really suffered. It's pretty sad, I think. Because the great banh mi spots are hard to find now. Read more

    I added the soy sauce and cilantro to the mayonnaise PLUS 1 tsp of sesame oil and a drop of fish sauce to ramp up the asian... flavor. The ground pork spilled off the baguette pretty quickly. Next time, I might try sliced pork (see Emeril's version on this website.) Otherwise, version delicious, crunchy with the veggies, plus filling! My boys and husband both said it's a keeper.Read more

    My husband hates bologna, and I did not want to throw out the bologna I just bought, so I look for recipe that uses it. It... was awesome. My husband likes it so much he asked for a second sandwich. I only use the bologna and slaw; very easy and quick. By the way, I'm from Vietnam (moved here at 18) so I should know how Banh Mi should taste, and I have to say: THIS TASTES AUTHENTIC.Read more
