Ingredients
- 2 cups shredded chicken
- 1 jalapeno, finely chopped
- 1 red onion, finely chopped
- 1 red pepper, chopped
- 2 scallions, thinly sliced
- 1 avocado, peeled and diced
- 1/2 cup chopped cilantro
Dressing:
- 3 tablespoons lime juice
- 1 tablespoon dijon mustard
- 1 tablespoon mayonnaise
- Splash of tabasco
- Salt
- Pepper
- 1/2 cup olive oil
Directions
Combine all ingredients in large bowl. In a small bowl, stir together lime juice, mustard, mayonnaise, tabasco and salt and pepper. Slowly drizzle in olive oil while constantly stirring with fork. Pour dressing over chicken mixture in large bowl and toss to combine. Serve over greens or as a sandwich

This is good. It was not my intention to create a "chicken salad" for sandwiches with the same items I use in a "chicken taco" but it worked well. Suprisingly well.

This was the simplest salad (besides a green salad I've ever made. and it was so full of flavor. This dish was definitely the hit at the cook-out!

I just got finished making and eating this salad. I will have to say this is the best salad I have ever had. Has a nice little kick to it.
