Ingredients

  • 1 cup chunky peanut butter
  • 1/2 cup low-sodium chicken stock
  • 1 lime, juiced
  • 1 tablespoon soy sauce
  • 1 teaspoon red chili flakes
  • 1/2 teaspoon cayenne
  • 1 tablespoon honey
  • Salt and freshly ground black pepper
  • 2 pounds chicken tenders
  • 2 tablespoons vegetable oil
  • 1 teaspoon allspice
  • Special equipment: bamboo skewers

Directions

Combine peanut butter, stock, lime juice, soy sauce, hot chili flakes, cayenne and honey in a small saucepan. Stir to combine and bring to a simmer over medium heat, stirring occasionally. When peanut butter has melted, season, to taste, with salt and pepper and remove from heat.

Preheat grill.

Skewer chicken tenders, brush both sides with oil and season with salt, pepper and allspice. Grill chicken until it is browned on both sides and cooked through, about 4 minutes per side. Serve with peanut sauce.

    I had the same problem with the peanut sauce and fixed it perfect! At 7:30pm on a school night with hungry kids, I didn't have time to start over and knew they wouldn't eat the super thick unattractive sauce either. I put the sauce in the food processor and poured in very hot water while pulsing the processor. It came out so good and my kids LOVED it!

    sauce turned out too thick and adjusting didnt help either. it wasnt as good as i thought it was going to be...
