Ingredients
- Leftover stuffing
- 2 eggs
- 2 teaspoons milk
- 1 cup seasoned bread crumbs
- 1 cup cranberry sauce
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup walnuts
- Oil, for frying
Directions
Preheat oil to 350 degrees F.
Cut leftover stuffing into bite-sized cubes and set aside. In a small bowl whisk eggs and milk. Coat each stuffing bite with this egg wash, then dredge in the bread crumbs until fully coated and set aside. In a food processor blend cranberry sauce, pepper and walnuts and set aside. Once oil is at temperature fry each piece of stuffing until golden brown about 4 minutes. Drain on a paper towel and serve with cranberry pesto.

We had a late Thanksgiving so I just used some of my leftovers last night. The bites are so yummy by themselves and with the cranberry pesto, they are phenominal!! My stuffing did not have meat in it, so I added leftover dark meat turkey (so I could sneak it past my picky hubby & son and put the stuffing and turkey mix into a food processor. I chopped it all up, made them into bites, deep-fried them and Holy Cow, they are so flavorful (I also seasoned my mixture and the panko breadcrumbs I used with garlic salt, onion powder & pepper. Do not skip the cranberry pesto. All I used was the jellied stuff and followed the recipe and the result is an awesomely tangy dip! YUM!! Sunny, you rock yet again!

Soo good! I didn't have the nuts for the cranberry so I just used the canned kind by itself. My hubs doesn't like cranberry so he just dipped in some leftover gravy and that was yummy too!
