Ingredients
- 1 pound wild Alaskan salmon fillet, skin removed
- 1 cup kosher salt
- 1/2 cup sugar
- 1 bunch cilantro, plus 1/4 cup chopped
- 1 plum tomato, diced
- 2 scallions, sliced thin
- 1 lime, juiced
Directions
Wash salmon and pat dry. Mix to combine salt and sugar. Lay 2 long pieces of plastic wrap on top of each other to form a cross. Layer half the bunch of cilantro in the middle of the plastic wrap, add half the salt-sugar mix and press salmon into the mixture, covering the bottom well. Top with the salt-sugar mix, rubbing it in well and place the remaining cilantro from the bunch on top. Wrap salmon tightly in plastic wrap and refrigerate 24 hours.
Wash off salmon and pat dry. Slice into 1/3-inch cubes and place in a bowl, tossing with chopped cilantro, tomatoes, scallions, and lime juice. Serve on crackers.

Fabulous recipe! I love how Sunny put her own spin on it by adding the cilantro and lime. Other recipes I've found for Lomi Lomi Salmon call for salted salmon, but where I'm from (CA it's not easy to find. Delicious recipe- I eat with rice if I'm having it for dinner (poi is nowhere to be found here or serve with crackers if appetizer. YUM!

Tried out the recipe and enjoyed it a great deal. The fish did come out a bit more salty but I cured it for two days and I did my own twist on it by adding to the toss, avocado and sesame oil and omitting the tomatoes.... Who cares if it's authentic Hawaiian, it's a tasty wonderful recipe!

I just saw this episode for the 1st time this week. I have to agree with kekoanaoa_12671449 from Hilo, HI. Sunny kept on stating that this is the way to make "traditional Lomi Lomi Salmon". No way!! Lomi Salmon is made with salt salmon, tomatoes, white onions, green onions and ice. It is eaten with Poi not CRACKERS.
