Ingredients

  • 5 to 6 pounds red bliss potatoes
  • 1 large onion, diced
  • 2 shallots, diced
  • 1/2 cup chopped garlic
  • 1 1/2 cups par cooked bacon, chopped
  • 1 1/2 cups salted butter, softened (recommended: Country Crock)
  • Salt and freshly ground black pepper
  • 1 cup applewood smoked Cheddar, grated
  • 1/2 cup chopped chives

Directions

Preheat oven to 400 degrees F.

Wash and cut potatoes into bite-size pieces. Place potatoes in a medium sized roasting pan. Add diced onion, shallots, garlic and bacon. Mix potatoes and other ingredients with softened butter until ingredients are coated thoroughly with butter. Cover with foil and cook approximately for 1 hour or until the potatoes are almost fork tender. Remove foil. Season with salt and pepper and place back in the oven for 20 to 25 minutes or until potatoes have a nice golden brown color. Garnish with grated cheese and chives.

    This recipe can be made to your taste! Be creative...add things you love...such as:
    Fresh Mushrooms -- Crumbled Sausage -- Bell Pepper -- Broccolli -- Peas -- even pinto beans are a great addition to this fabulous recipe!! Just pick what you are in the mood for and ADD it! I don't mean for you to add too many ingredients...only one thing at a time to make a difference and give you variety! Love it...Love it...Love it!

    We made this tonight as a side dish with a grilled london broil. Cut the recipe in half for the four of us. It was easy to prep. The kids don't like much seasoning, but we kept the recipe the same. After about 45 minutes the whole house smelled wonderful. The time was right on, and the presentation was perfect. Flavor was great, and the kids loved it. They both went back for seconds, and cleaned the pan. We will definately make this again. It will be one of our staple sides with grilling.

    I served these potatoes at our church breakfast and they were a BIG hit. They were so different and the taste was fantastic!! It had a lot going on for it with garlic, bacon, cheese & chives.
