Ingredients

  • 2 tablespoons rice vinegar
  • 1/2 cup olive oil
  • Salt and freshly ground black pepper
  • 2 large ripe tomatoes, cut into wedges
  • 2 English cucumbers, peeled and sliced into 1/4-inch thick slices
  • 1 papaya, peeled, diced large and seeds reserved

Directions

In a mixing bowl whisk vinegar while slowly adding olive oil. Season with salt and pepper and toss with tomatoes, cucumbers, papaya, and papaya seeds. Taste and adjust seasoning.

Serve family style.

    This recipe is great. I used grape tomatoes cut in half and a regular cucumber diced. I did not use the papaya seeds. This recipe is a keeper. Even my fussy husband claimed it was good. Next time I am going to try and cut everything smaller and serve it over a grilled chicken breast.

    and so-o good. I love tomatoes and cucumber salad--especially with rice vinegar--so this caught my eye. I was planning a buffet for my parets wedding anniversary, so decided to try this. The bit of sweetness is wonderful. Even leftovers two days later were good. Before I left to come home, Mom asked me to make it again. This time we added a little vidalia onion--that was very good too. This is this summer's picnic salad.
